炸的食品做到酥脆並不是太大的問題~很多奇摩知識大大也都有提供了。不知道有沒有人知道如何\"煎\"得酥脆~?皮薄這我知道~但薄過了頭遇上油也是會軟化…我嚐試了許多方法~但都不成功…有誰願意提供好方法呢?基本上應該是在麵糊中做變化吧?我有使用酥脆粉了~但就是沒辦法\"煎\
