饅頭麵糰為何會椪風 - 整形

麵糰用攪拌機完成後.經過整形機壓至光滑亮面.捲起來切成想要的重量.放置蒸盤上述10分鐘後.放進蒸包機內不開火(約40度)的狀態下讓麵糰發酵.待發酵至可開火蒸麵糰的大小時.卻發現麵糰都碰風.請問至是甚麼原因所造成???
