想知道為何在做麵包的過程中要先稱料.然後用機器打.為什麼要打到擴張階段,然後進入基本發酵,要等到他發到什麼程度呢?然後為什麼要滾圓,然後為什麼要整型?整完型後中間發酵又是為什麼呢??送入烤箱後為什麼麵包在塗蛋液之前要加一些水再蛋液裡呢?然後要怎麼樣包才比較不容易爆餡呢??................
