在板上眾多的如何減重增肌問題文中
常常看到許多人問自己的蛋白質是不是吃得太少
也會有許多板友推薦以動物性蛋白質為主的飲食
水煮雞胸肉似乎變成最健康的主食
植物性的蛋白質則會被質疑不完全 不易被人體吸收
我不是營養學或醫學專業
會特別關注營養是因為5年前為了讓自己更環保,決定捨棄肉食
必須重新規劃飲食,於是開始閱讀和收看各種植物性飲食的資訊

我一開始也擔心植物無法提供足夠或 “優質” 蛋白質
但全植物飲食的推廣者駁斥了各種蛋白質不足的質疑
此外Michael Greger提到美國人的飲食最容易缺乏的其實是纖維
(97%的人纖維攝取不足) https://nutritionfacts.org/topics/fiber/
Dr. T. Collin Campbell在The China Study也提及
動物性蛋白質的攝取過量會讓身體發炎反應加劇,
並增加癌症風險 (牛乳中的蛋白質80% 是casein,實驗證實會提高癌症風險)
幾個月前讀完Fiber Fueled (by Will Bulsiewicz)
書中主要討論腸道細菌和人體健康的關係,
一再強調植物中的纖維是腸道好菌的主要食物,
另外也不段重複腸道健康的關鍵: diversity of plants
在用這些植物飲食書籍洗腦完自己後,我也越來越相信
Whole food, plant based diet
除了對地球友善,也是對人體健康最好的飲食方式。
關於飲食和健康的關係,有太多互相衝突的資訊。
或許因為營養這門科學發展的不夠久,
或許因為吃的背後有龐大商業利益
(Marion Nestle 在 Food Politics 中舉了許多商業利益操弄實驗結果的例子) ,
另外也有人因為自己短期成功的瘦下來就覺得自己變成飲食專家,
卻忽略anecdotal evidence參考性低,也看不到長期對健康的影響。
說了這些,如同標題表達的,我只是想對板上的蛋白質狂熱畫上問號
