有些人在減重時,會刻意減少油脂攝取,臺安醫院營養師劉怡里提醒,油脂攝取過少,可
能影響脂溶性維生素A、D、E、K吸收,皮膚會變得較乾燥、失去彈性。此外脂肪會保護內
臟,和荷爾蒙分泌也大有關係,因此體內脂肪過少可能引起內臟、骨骼受損,有些人會變
得特別怕冷,甚至還會引起女性停經、不孕。如果是小孩亂減重,脂肪大量減少,可能造
成發育遲緩。
要攝取多少脂肪才不會影響健康?劉怡里表示,油脂攝取量最好不要超過總熱量30%,舉
例來說,一個人一天攝取總熱量建議1800大卡,油脂攝取量則不要超過60公克。
在油脂攝取上,劉怡里建議,要盡量避免食用反式脂肪,最好選擇芝麻油、橄欖油、堅果
類油脂等植物性脂肪,另外,也要多選擇低脂、低膽固醇食物,如瘦肉、雞肉和魚肉等,
必要時也可以補充一點魚油,魚油含Omega-3脂肪酸,對身體很有益處。大部分海鮮雖然
是低脂肉,不過膽固醇含量較高,要特別留意膽固醇問題。
劉怡里提醒,許多人在減重時會避開油炸、炒菜等「看得見的油」,反而吃進許多看不見
的油,例如大腸麵線,勾芡方是最會包覆油脂,還有燒餅、波蘿麵包、奶酥麵包等也都很
油,像紅燒、三杯等料理往往也含有大量脂肪,減重者最好盡量少吃這些食物,以免攝取
過多脂肪。
