人類活動就需要能量,假如想移動 60Kg 一公里,需要的能量不會憑空生成,沒有光合作用的能力就需要進食去填補這能量缺口。
在人類身上,每種活動所需要的能量源都不一樣,基本上的大原則就是強度愈高,對碳水的需求愈大。
而在人體身上,碳水的儲存量有限,偏偏身體需要碳水(葡萄糖)運作,保證的方式是 gluconeogenesis (GNG) 糖質新生。
GNG 需要的材料可以是食用的胺基酸(蛋白質),果糖,半乳糖,或者自體的備存,這邊說的會是胺基酸。
相比起碳水的儲存能力,人體的儲存的胺基酸能力更差勁,在沒進食補充的情況下,就會增加使用自體作材料,例如加速去除老舊,失能的細胞(Autophapy),嚴格上這是不會停止的事。去除老舊再重新長出來,世代交替,對人體是有利的事情。
正常情況下,人體就腦袋都需要每天 117g - 142g 葡萄糖,即每小時 4.8 到 5.9g 之間,只有在長期的攝取不足,血中酮體濃度足夠高,由 3mM 到 5mM 之間才會減少到大慨 80g(每小時 3.3g),而這有 15g 到 20g 出自蛋白質。
需要酮體到這程度,論文中是大慨三週的斷食時間。在斷食首 48 小時,原則上,腦袋都是依賴碳水供能。
只要碳水食用,儲存量不足,就可以視為需要蛋白質作材料去產出葡萄糖。
運動是強而有力的消耗碳水的方式,所以可以視運動作『加速斷食時段』。
正因如此,運動者需要增加蛋白質攝取量,由普通閒適人仕每公斤體重0.8g,增加到每公斤體重2-2.5g會比較有利於保留肌肉,瘦體重。
