醉雞胸肉 - 健身

最近發現這個雞胸肉的做法蠻簡單省事的
而且個人覺得非常好吃,分享給大家
不囉唆先來張成品圖:

醉雞胸肉
做法非常簡單
準備材料只需要:
1.雞胸肉(條狀里肌肉也OK)一盤100g
2.枸杞小把(可買真空乾貨)
3.紹興酒3/4杯(酒的好壞決定好吃程度很多...)
4.鹽 1~2小匙
一、首先將生雞胸肉放入碗中,灑上兩匙鹽後用手拌勻

二、將拌完鹽的雞胸肉放入電鍋中蒸熟,把湯水瀝乾,瀝完後於室溫擺涼

三、抓大概一小掌心的枸杞丟入鍋子中,加入一杯水,將枸杞煮至水滾開。滾開後將鍋子
放在室溫中擺涼

四、等枸杞水擺至常溫後將3/4杯的紹興酒倒入鍋中,切記一定要確定鍋子溫度已經降下
來不然酒精會揮發掉,雞胸肉擺至常溫的道理異同,如此醬汁就完成了

五、將所有雞胸肉塞至一個較高碗公內,再把醬汁倒進去,蓋上保鮮膜後放進冰箱
泡約36~48小時後就可以拿出來享用了

幾個重點提醒:
1.酒遇熱酒精就會揮發掉,所以切記放涼這動作不可省略
2.第一步的兩匙鹽巴一定要抹,不要覺得兩匙很多,實際上蒸熟後大多都隨水分流掉了
鹽巴是很重要的提味,另外「絕對不可直接把鹽巴放進醬汁中」,因為酒遇到鹽巴
會產生苦味。
3.切記一定要用"紹興酒",其他都不行
雖然說健身不要碰酒啦,但是我覺得這道菜沾一點應該還好,個人是拿老爸偷藏的十年
紹興來做,味道不會太重的,大家可自行適情況調整比例。
這醉雞有個大優點就是可以吃冰的,而且一點都不會柴,以現在夏天來說蠻適合的
