每人每日膽固醇平均攝取建議量:男344mg 女264mg(http://tinyurl.com/3l567vy)
每100g雞蛋膽固醇含量 416~ 504mg vs 每100g蛋黃膽固醇含量 1480~1545mg
1顆重量約50g的全蛋=蛋殼5g(10~12%)+蛋黃15g(30%)+蛋白30g(60%)
故,每顆含15g蛋黃之全蛋膽固醇含量約222~232mg <= 1天1顆蛋的膽固醇尚未超標
話說,斯斯有兩種,膽固醇也有兩種!( ′-`)y-~
1個促進動脈硬化-壞的膽固醇(LDL-C)
1個對於血管維護-好的膽固醇(HDL-C)
當食物中攝取的膽固醇不足時,體內會自動合成。當攝取太多的膽固醇時,消化系統
會控制膽固醇的吸收而另方面肝臟會減少膽固醇合成,因此膽固醇的總量會自動增減
,維持恆定。
相關研究指出,每天吃3到4顆蛋的人會比沒吃蛋的人製造出較大顆粒的低密度脂蛋白
和高密度脂蛋白,而較大顆粒的低密度脂蛋白不會穿過血管內壁而行成堵塞血管的血
栓。較大顆粒的高密度脂蛋白也較具能力將膽固醇從血管清除。
再者,蛋黄中的卵磷脂具有生物乳化劑(所以沙拉油加蛋黃打成的沙拉醬很爽口)的
特性,就像是個垃圾袋可將積存在血管壁上的脂肪、膽固醇帶走。
比起整體飲食中紅肉和乳製品所內含的飽和脂肪酸(使血膽固醇升高的真正元兇),
其實蛋黃或食物中的膽固醇對血中膽固醇值的影響低到超乎你想像!
講了這麼多,如果還是擔心的話,有空去驗個血吧!
若膽固醇值是ok的,那麼你要注意的是整體飲食的脂肪含量而非單一食材的膽固醇;
若驗血結果是膽固醇值過高或是有心血管疾病之虞,這時就真的要注意蛋黃攝取量。
結論:1、比起挑掉蛋黃不吃,每天整體飲食的脂肪攝取量比較需要注意。( ̄▽ ̄||)
2、請儘量多從天然的各式榖類、雜糧、堅果、種子、蔬果...等,攝取人體無
法自行合成但它偏偏可以干擾腸道吸收膽固醇的植物固醇(Phytosterol),
以維持體內膽固醇濃度。
如:植物油、花椰菜、花生、香菇、柑橘、紅蘿蔔、菠菜、堅果、蕃茄、
五榖雜糧、芝麻、黃豆、蘋果、燕麥.........等。
