美國研究指出,動物實驗後發現,一週禁食一至二天,可以預防老人癡呆症或帕金氏
症等腦部退化相關疾病,不過研究人員提醒,每天從飲食中降低熱量的攝取並不是最佳的
方法,間隔一段時間才是關鍵。
英國《每日郵報》報導,科學家在進行老鼠實驗時發現,完全不攝取卡路里可以延長
老鼠的歲數。對此,科學家認為,同樣結果有可能適用在人類身上,因為禁食後再進食,
可以刺激腦部活力再生,而且在禁食期間,也可以減掉身上體重。這種飲食控制的方法,
可以預防心臟、心血管系統與腦部產生諸如阿茲海默氏症等疾病。
英國《衛報》則指出,美國老年疾病研究院研究人員表示,7天中有2天將食物攝取的
卡路里降至500,腦部活力再生效果最為明顯,研究人員默特森表示,「減少卡路里攝取
有助於腦部健康,不過,我們不建議任何人以每天減少食物攝取的方式,來達到這個效果
。」,他說,「在禁食之後再進食,效果會比較好,也就是說,間隔一段時間是關鍵。」
研究人員利用二組老鼠進行實驗,其中一組老鼠只能被控制在某幾天可以進食,另一
組則每天接受餵食,結果發現第一組被控制進食天數的老鼠,開始對胰島素的刺激更為敏
感,體內胰島素的分泌量也有所減少。研究人員表示,這是因為當攝取三餐或食物之後,
體內會分泌大量賀爾蒙來降低血糖,腦部活力也會因此降低,並可能成為糖尿病高風險群
。
研究人員認為,腦部產生新細胞與抗壓有所關連默特森則表示,「飲食控制可以增加
歲數,並保護腦部與心血管系統發生老化疾病。」

(Daily Mail)報導,美國國家老化研究中心(National Institute on Ageing)研究發\

主持研究的神經學專家麥特森(Mark Mattson)教授表示,研究發現定期禁食可以延長壽\
命、保護大腦和心血管健康。研究人員將老鼠分成兩組,一組老鼠隔日禁食,一組老鼠則\
是無限制地吃。結果發現到隔日禁食的老鼠,不但對於胰島素更加敏感,減少胰島素的分\
泌,減少第二型糖尿病發生的機會。
除了胰島素分泌量下降外,麥特森教授也發現到,禁食的老鼠可以改善神經細胞中突觸的\
功能,讓神經細胞可以承受更大的壓力,可能會預防阿茲海默症(Alzheimer`s Disease\
)及帕金森氏症(Parkinson`s Disease)等腦部疾病。最後麥特森教授發現到,禁食的\
老鼠壽命也比較長。
麥特森教授強調,這樣所指的節食,是採用每週1到2日禁食,或是採取每天減少攝取500\
卡路里的熱量,都可以看出效果。麥特森教授指出,過去的研究已經發現到,適度的禁食\
可以幫助對抗癌症,還可以幫助化療發揮更好的效果。所以他認為如果,人類應該也可以\
透過類似的禁食模式,幫助自己更健康。

熱量攝取過多 易失憶

根據美國最新的研究,年長者每日攝取的熱量超過2100卡路里,可能造成認知功能障礙,\
失憶的風險也加倍。
美國研究人員對1233名年齡在70到89歲,沒有罹患失智症的老人進行分組調查:第1組每\
天攝取的卡路里在600到1500卡之間,屬低卡路里組;第2組為中卡路里組,每天攝取量在\
1500到2100卡之間;第3組高卡路里組,在2100到6000卡之間。
研究人員再對他們進行認知調查,發現有163人出現記憶問題,熱量攝取最多的第3組,出\
現認知功能障礙的機率是其它組的2倍。
據英國媒體報導這項調查的內容顯示,即使研究人員將可能影響失憶的因素,例如教育程\
度,或有中風、糖尿病、憂鬱症等因素都計算在內,結果仍然證明高熱量飲食易造成認知\
功能障礙。
研究人員建議,老年人要避免罹患失智症,飲食最好是低卡路里,這樣有助保持頭腦清醒。

常吃垃圾食物 加速大腦老化
中國時報【鍾玉玨╱綜合報導】美國研究人員發現,炸薯條等垃圾食物不僅有損牙齒、增
加腰圍,而且還有害大腦,會加速大腦老化,關鍵則是其中的反式脂肪。
奧立岡衛生與科學大學研究員鮑曼說,掃描老人的大腦後發現,血液中維生素和ω-3脂肪
酸含量較高的受訪者腦容量較大,而血液中反式脂肪較高者,腦容量偏小。鮑曼表示,由
此可見反式脂肪不僅有害心臟,也有損大腦。
反式脂肪可延長食品保鮮期,改善食品口感,常見於蛋糕、餅乾、油炸食品等加工食品,
但反式脂肪所含的化學成份會對大腦釋出有害訊號,降低大腦控制食慾的能力。
研究發現,零食吃得多,會抑制大腦分泌控制食慾的物質,讓人覺得彷彿一直處於飢餓狀
態,結果愈吃愈多,進而上癮。
孩子若太貪吃,尤其是嗜食反式脂肪含量高的垃圾食物,大腦智力發展區會受到壓抑,導
致兒童難於對新知、新事物產生興趣,長期下來,可能年紀輕輕就健忘、智力也會降低。
